Smoked Beef Brisket - Oh yeahhhhhhh

TGIF!! And it's Labor Day weekend to boot.  I'm looking forward to some chillin' time with my peeps.

John is taking off the afternoon and he'll be expecting the brisket to be swaddled in its rub and ready to take a long siesta in the smoker.  Yes, he's starting the smoker up two days ahead of time.  He is the "Grill Master" so what he says goes - I don't question it.

I had one brisket in the freezer from when they were on sale and the girls picked up a couple.  I picked up another yesterday from GFS (Gordon Food Services) and they are awaiting the spices.  This is the rub I'll me mixing up:

1/2 cup brown sugar
1/2 cup paprika
1/4 cup kosher salt
1/4 cup chili powder
1/4 cup dry mustard
1 Tablespoon black pepper

I'll mix it all up and lather the beef in it and then wrap it securely in plastic wrap.  It will wait in the refrigerator for the next step.
