Breakfast casserole with sausage


  • 2 lbs ground breakfast sausage, cooked and drained
  • 3 cups bread, cubed
  • 8 eggs
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1 teaspoon dry mustard
  • 1 lb shredded cheddar cheese
  • 1 can cream of mushroom soup


  1. Combine eggs and 1 1/2 cup milk, dry mustard and optional salt
  2. Add bread cubes, make sure to sink in eggs until all the bread is well coated
  3. Let sit for 10 minutes to allow bread to soak up some egg mixture
  4. Add ground sausage and cheese to egg mixture
  5. Pour into a prepares 9 x 13 pan
  6. Combine soup mix and 1/2 cup milk.  Pour over top and spread well.
  7. Bake 30-40 minutes
  8. Let rest/cool for 15 minutes before serving
