Pineapple Fried Rice

Name: Pineapple Fried Rice
Yield: 4-6
Ingredients: 2 tbsp oil (neutral like avocado or canola); 2 eggs, lightly beaten; 1 lb chicken breast or thigh, thinly sliced; 1/2 lb shrimp, peeled and deveined; 2 cups cooked white rice (preferably day-old and chilled); 1/2 cup diced pineapple (fresh or canned, drained); 1/3 cup cashews; 1/2 cup diced or shredded carrots; 1 cup snow peas, trimmed; 1/2 cup green onions, sliced; 1/2 cup onion, diced; Salt and pepper to taste; Optional: a pinch of red pepper flakes for heat; Brown Sauce - see link in notes
