Hmm, that was tasty! Quesadillas with Pineapple and Cilantro

Hey folks,

Just FYI I tried a little twist on something tonight and it turned out pretty good.  I needed to make chicken last night and knew I'd be using leftovers for these yummy quesadillas so I baked the chicken in a pan of the marinade for fajitas.  I didn't just baste the chicken or marinade it - I poured the marinade in the pan so the chicken was literally swimming in it (well, more like floating lightly).  I baked it low and slow and the chicken turned out really moist and really good.  Then I refrigerated the leftovers and chopped it for the quesadillas and it added a nice flavor to a dish that was already pretty good.

I'll be making a note of that in my favorites binder and thought you might want to give it a go :-)
